How We Did It
On Saturday, October 10, 2026, we rolled the rig into Hilltop Truck Park in Northlake, Texas, for the Hilltop Margarita Festival, and fired it up to go after a world record.
Pitmasters Trace Arnold and Brendan Lamb worked the fire all day, turning out brisket, baby back ribs, sausage, rotisserie chicken, beef ribs and pork belly. Nick ran setup and operations, making sure everyone who came through got their food fresh and hot. Guests also had the chance to give to the H3 Foundation and grab a free T-shirt.
Then came the moment of truth. Eagle Surveying measured the rig end to end, top to bottom, and Guinness World Records made it official: The World's Largest Ultimate Smoker & Grill is the largest food truck in the world.
